Chickpea Salad with Lemon-Tahini Dressing

Ingredients:

1 can chickpeas, drained and rinsed

1 cucumber, diced

1 bell pepper, diced

1/4 cup chopped fresh parsley

1/4 cup chopped fresh mint

Juice of 1 lemon

2 tablespoons tahini

2 tablespoons olive oil

Salt and pepper, to taste


Instructions:

In a large bowl, combine chickpeas, diced cucumber, diced bell pepper, chopped parsley, and chopped mint.


In a small bowl, whisk together lemon juice, tahini, olive oil, salt, and pepper to make the dressing.


Pour dressing over the chickpea salad and toss gently to combine.

Serve chilled or at room temperature.
